The quality of the soil determines the quality of the wood

There are differences in the amount of volatile components in the same type of tree. Research conducted over the past several years has revealed that the cause of this difference is related to geology. The land that had long been reputed to be good for the himekomatsu of the region was a mineral-rich area where the former sea had emerged above ground. As it is said that the soil directly influences the taste of the grapes and creates the character of the wine, it was also the soil that gave Himekomatsu its unique characteristics.
